Leftover Turkey Tortilla Bake

  • 2 cups shredded turkey
  • 16 ounces (about 1½-2 cups) salsa verde (green salsa)
  • ½ cup DairyPure® All Natural Sour Cream
  • 3 10-inch flour tortillas
  • 2 cups shredded Mexican style cheese (cheddar, monterey jack, etc)
Leftover turkey finally has a happy place - in this pie! Easy and only 5 ingredients, your family will never know it’s Turkey Day leftovers!
Cooking instructions
  1. Preheat oven to 400 degrees.
  2. In a bowl, mix turkey, all but ⅓ cup of the salsa, and sour cream.
  3. In a greased pie dish lay one tortilla in the bottom of the dish. Add ½ of the turkey mixture and spread it out in a layer on top of the tortilla. Add the second tortilla, then remaining turkey mixture, then top with last tortilla.
  4. On top of the last tortilla, spread the remaining ⅓ cup salsa verde over the top, then sprinkle the cheese over the top.
  5. Bake uncovered for 15-20 minutes until cheese is bubbly and completely melted. Serve warm with additional sour cream if desired and sprinkle with chopped cilantro.
